What Are The Major Differences Between BBQ Sauce Styles?

Hot coals, hot temps, hot sauces. We are seeing something delicious as summer takes shape: BBQ-in all of its saucy, finger-licking glory! When many of us think of BBQ, the classic ketchup/molasses sauce probably springs to mind quickly, but there is a whole plateful of sauces from different areas in the USA that deserve your undivided attention at your next backyard bash. So, grab those bibs or wet-naps, fire up the grill and let’s slather on DA SAUCE!

There isn’t just one…

It’s easy to say “Let’s make or get some BBQ!” but real enthusiasts know that there is a world of differences among BBQ, based on region. Here are the main varieties:

Alabama – A creamy, milky white sauce made of mayo, vinegar, and black pepper.

Eastern North Carolina – A vinegar-based sauce that is spicy and acidic and does not contain any tomato. Contains spices such as cayenne, black pepper, crushed red pepper, hot sauce, salt and water.

Kansas City – The sauce most commonly known that is thick, sweet, and tangy with ketchup and molasses.

Memphis – Similar to a Kansas City-type sauce but is less sweet and more spicy. This sauce is typically served on the side of the meat, not on it.The meat is BBQed dry, with only a spice rub.

South Carolina – A Mustard-based sauce with garlic, honey, Worcestershire sauce, ketchup and apple cider vinegar.

Texas – Called a “Mop Sauce”, because, yup, it’s applied with a mop. Beefy tasting with vinegar, Worcestershire sauce, black pepper and garlic. It’s more of a glaze than a thick sauce.
