Think you’re getting the freshest cuts of meat no matter what time of year it is? Think again. Just like produce, meats are seasonal and it only makes sense to go with what’s freshest, right? We’re going to let you in on a little secret – lamb is in right now and you should be taking full advantage!

Easy Grilled Lamb Chop Recipe:

¼ cup distilled white vinegar

2 tspn. Salt

½ tspn. Black pepper

1 tbsp. Minced garlic

1 thinly sliced onion

2 tbsp. Olive oil

2 pounds lamb chops

In a large resealable, mix vinegar, salt, pepper, onion, garlic and olive oil. Once the salt has dissolved add lamb. Toss around until lamb chops are fully coated and then refrigerate for 2 hours. Set up your grill at medium-high heat. Wrap the exposed ends of the bone in aluminum foil to prevent them from burning and grill to desired doneness. About 3 minutes per side should do the trick!
