You got the marble notebooks. You got the pens and pencils. You got the backpacks and the new sneakers. Phew! Thank goodness all of that is behind us. But now that your children are back in school, you can’t forget about their lunch! And we know that you don’t have a ton of extra time on your hands so we’ve put together a few quick, easy and healthy recipes to pack for your kids:
Tuna Salad: we like to use chunk tuna and just a little bit of mayo. You can even throw in some cranberries for an added dose of antioxidants and luckily for you mom or dad, preparation takes only about 3-4 minutes.
Peanut Butter & Banana Burrito: take a whole wheat wrap and smear it with peanut butter. Then chop up a banana and sprinkle in some honey. Roll it gently and you’ve got a delicious and healthy burrito.
Cream Cheese & Tomato Sandwich: you can use just about any type of bread for this simple classic. Just add cream cheese and sliced tomatoes. If your kids don’t like tomatoes, substitute cucumbers instead.
Pizza Quesadillas: pizza sauce, mozzarella cheese and flour tortillas never tasted so good. And if your kids are anything like ours, they’ll love them even if they’re not heated up!
PB&J Sushi: this take on your traditional sandwich will be the talk of the lunch room. Roll up peanut butter and jelly inside whole wheat bread and cut into sushi-sized bites.
