5 Last-Minute Fast & Easy Thanksgiving Recipes

With Thanksgiving only a few days away, you’ve probably got a lot on your plate already. See what we did there?! Even if you’re not hosting this year, deciding on a dish to bring over to a friend’s or relative’s house can be quite stressful — not to mention some of them can take quite a while to cook. Well, if you’re looking for something quick and easy you’re in the right place! All of the recipes below can be cranked out in 30 minutes or less.

1 – Honey Roasted Carrots

Mix olive oil and a tablespoon of butter in a preheated pan. Then add carrots, salt and pepper, toss and bake for 10 minutes. On the side, melt two tablespoons of butter in a saucepan and add 1 chopped shallot and 2 tablespoons of bourbon. Cook for 5 minutes and then drizzle with maple syrup. Bake for an additional 5 to 7 minutes, transfer to a serving dish or pan and garnish with thyme.

2 – Chipotle-Orange Cranberry Sauce

You can spend time making it yourself, but it’s much faster if you buy it from the store. To make it your own, mix in a little brown sugar, chipotle powder, ground cinnamon and a splash of orange juice.

3 – Garlic Parmesan Broccoli

Roast broccoli in the oven sprinkled with garlic powder, or saute it in a pan with fresh, minced garlic and olive oil. Then top with parmesan-reggiano cheese and broil until the cheese melts and brown spots begin to form. That’s all there is to it!

4 – Lemon Parsley Potatoes

Grab a bag of small red potatoes and cut them into quarters. Cook in boiling salted water until tender (roughly 15 minutes). Melt ½ cup of butter and 3 tablespoons of lemon juice and pour over potatoes. Finish with minced, fresh parsley and serve!

5 – Pumpkin Chocolate Chip Cookies

Prep takes 10 minutes and baking takes 10 minutes and who doesn’t love a dessert than can be ready in a total of 20 minutes? In a bowl, mix 1 cup softened butter, ¾ cup sugar, ¾ cup brown sugar, 1 large egg and 1 teaspoon vanilla extract. Then combine 2 cups all-purpose flour, 1 cup quick-cooking oats, 1 teaspoon baking soda and 1 teaspoon of ground cinnamon. Stir in 1 cup of canned pumpkin and 1 ½ cups semisweet chocolate chips. Drop on a cookie sheet in tablespoonfuls and bake at 350°F for 10 minutes.
