Warm Up A Cold Winter Day With A Hearty Lunch

5 Lunches That Will Warm Your Soul This Winter

While salads and cold cut sandwiches are popular picks when it comes to lunch all across America, they may not be the most appealing choice on a frigid winter day. You may be thinking that warm meals are too involved to bring to and heat up at the office, but we’re here to provide with you some great information. The hot, delicious options below can be prepped the night before and heated up in a just a few minutes at the office:

1 – Instant Noodle Jars

Fill a mason jar with your favorite veggies (carrots, peas, corn, bell peppers, etc.) and some cooked spaghetti. Leave it in the fridge overnight and pack it with you before you leave for work. All you need to do is add hot water at the office and you’ve got yourself a bowl of homemade ramen. You can even eat it out of the jar if you’re on the go.

2 – Stuffed Peppers

If you have a microwave or toaster oven in the kitchen, this is the perfect meal. Chop some bell peppers in half and fill them with a mix of ground turkey and diced or mashed sweet potatoes. Garnish with feta cheese and fresh parsley.

3 – Meatloaf & Mashed Potatoes

This one does take a bit longer when it comes to preparation and cooking time, but if you make it one night during the week, you can have it for two or three lunches. Think of the meatloaf like a loaf-shaped meatball — add your favorite herbs and spices, and maybe even a little barbecue sauce and you’ll be thanking us each time you sit down for lunch!

4 – Kale, Sausage & Lentil Soup

It wouldn’t be fair to list out five winter lunches without giving soup the credit deserves. Sure, some soups are bland and boring, but why settle? This sausage and lentil soup with kale is anything but ordinary, and yummy? You bet!

5 – Veggie Quesadilla

The possibilities are just about endless when it comes to vegetable quesadillas. Simply cook up a batch of your favorites, feel free to mix and match, and dump them into a tortilla with some low-fat cheese. This is another option that only takes a few seconds in the microwave or toaster oven.
